Lunch follow up

As a follow up to my previous post:

In the design business we often tell clients there are 3 ways they can
have their design delivered:
1) good
2) cheap
3) fast

Then we tell them to pick to. Is that the way it has to be with my
meal critiria too? I'm not willing to compromise just yet. Help me out
by telling me your favorite meals that meet ALL the critiria: healthy,
fast, cheap, and most important, yummy!

hmmm...that's a tough one. For lunch today I made home made split pea soup....cheap and yummy and nutritious, but not so fast. It simmered most of the morning, but I was able to do other things meanwhile. Maybe our supper could qualify...left overs, but good leftovers, and it was quick, fast and cheap. (penne pasta with chicken breast and veggies and alfredo sauce served along side fresh grapes and honeydew melon)

My default lunch for the first month or so of my new job was a bowl of rice with black beans and some frozen veggies (corn, red pepper, etc). It only takes about a minute to heat up in the microwave. I just topped it with a bit of hot sauce. It's not the tastiest lunch in the world, but it IS cheap and easy!

My plan for this week is pasta with pesto - I got a jar of Costco pesto that is delish!

Here is what I like for lunch:
spinach, strawberries, chicken and ritoni noodles with rasp. viniagrette. You make it at home - and the ingredients last all week!
(The chicken can be bought frozen, pre-cooked and cut into strips - that's quick!)

Our new favorite:
Whole grain tortilla (wraps); brown rice (that takes an hour to make, but you can make a ton to last all week)...and some of that same chicken I talked about up there...and steam some brocoli and mix in a small bit of poppyseed dressing. yummy!
